Bree Eats: Sweet and Mild Shrimp

Lately, some of my favorite meals have all been made with the awesomeness that is coconut milk. Adding coconut milk to meat and vegetable dishes bring a silky smooth deliciousness unlike any other. Tonight, I randomly threw some things together and had to post the results.  I call it "Sweet and Mild Shrimp"--Hey, it's a working title! The buttery sweetness of the milk meld well with the spices making this dish too good not to try! What you'll need:



Add one tablespoon olive oil to a medium heated skillet. Season the shelled shrimp with garlic, basil, pepper and salt. Cook the shelled shrimp in one layer until one side is lightly pink, about one or two minutes. Add thinly sliced red onions followed by flipping the shrimp and add enough coconut milk to just cover the shrimp. Cook the shrimp until the coconut milk thickens. Add more seasoning to taste if needed.

These little babies would go great with a baked potato, tossed with pasta, or poured over your choice of rice and veggies. Enjoy.
